Ingredients
- 2 cups finely chopped broccoli florets
- 1 cup cottage cheese
- 1 cup shredded sharp cheddar cheese
- 2 large eggs
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray
Instructions
Refrigerator: Allow the poppers to cool completely, then store them in an airtight container for up to 4 days.
Freezer: Place cooled poppers on a baking sheet and freeze until firm. Transfer to a freezer-safe bag or container and freeze for up to 2 months.
Reheating: Reheat in an air fryer at 375°F for 5–7 minutes or in a 400°F oven until heated through. This helps bring back the crispy exterior.
Avoid relying on the microwave if you want them crispy, as it can make the outside soft.
Notes
Broccoli: Fresh broccoli works best, but frozen broccoli can also be used. Thaw it completely and squeeze out as much moisture as possible.
Cottage cheese: Full-fat or low-fat cottage cheese works. For a smoother texture, blend it before mixing.
Cheddar: Sharp cheddar gives the poppers the most flavor. Mild cheddar, Monterey Jack, or a cheddar blend can also be used.
Breadcrumbs: Regular breadcrumbs help bind the mixture. Panko creates a slightly crunchier exterior.
Parmesan: Parmesan adds extra savory flavor and helps the outside brown nicely.
