Pumpkin Spice Baked Oatmeal

This Pumpkin Spice Baked Oatmeal is everything you want from a cozy fall breakfast: warm oats, creamy pumpkin, maple sweetness, and plenty of cinnamon spice.

Make it on Sunday and you’ll have an easy breakfast ready for the week. Serve it warm with a little maple syrup and crunchy pecans for the ultimate pumpkin-season breakfast.

  • Total Time: 35–40 minute
  • Yield: 6 1x

Ingredients

Scale
  • 2 cups old-fashioned rolled oats
  • 1 cup pumpkin puree
  • 1 1/2 cups milk
  • 2 large eggs
  • 1/3 cup pure maple syrup
  • 2 tablespoons melted unsalted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup chopped pecans or walnuts, optional

Optional Toppings

  • Pumpkin seeds
  • Chopped pecans
  • Greek yogurt
  • Maple syrup
  • Whipped cream
  • A sprinkle of cinnamon

Instructions

Refrigerate: Let the oatmeal cool completely, then cover the baking dish or transfer individual portions to airtight containers. Refrigerate for up to 5 days.

Freeze: Cut the baked oatmeal into individual portions and wrap them well. Place in a freezer-safe container and freeze for up to 3 months.

Reheat: Microwave an individual portion for about 60–90 seconds, adding a splash of milk if needed. You can also reheat it in a 350°F oven until warm.

Notes

Pumpkin puree: Use plain canned pumpkin puree, not pumpkin pie filling. Pumpkin pie filling already contains sugar and spices.

Rolled oats: Old-fashioned rolled oats give the baked oatmeal its best texture. Quick oats can work but may create a softer, less chewy result.

Milk: Whole milk gives a richer texture, but 2%, almond milk, oat milk, or another milk alternative can also be used.

Maple syrup: Pure maple syrup adds a natural caramel-like sweetness. You can adjust the amount depending on how sweet you like your oatmeal.

Pumpkin pie spice: A store-bought blend is convenient, but you can make your own with cinnamon, ginger, nutmeg, and cloves.
